My boys love pancakes. So do I. Stacy recently gave me a subscription to Cooking Light magazine and there was a yummy recipe for Carrot Cake Pancakes in it that I knew I had to try. We used carrots from our garden (we still had some in January!) and they were delicious.
I was worried my boys would freak out over the shredded carrots in them, but lucky for me they didn't even notice! They loved them. See...I have proof.
Nothing better than one of our favorite meals, with a little extra nutrition added in. Click here for the recipe so you can try them with your family.
Thank you for the link to the recipe. We also love pancakes in our house. And this is a wonderful way to fit in more veggies. ALthough my "boys" are not as young as yours.

P.S. Love your blog!
Great idea - at that young age it is so hard to make sure our kids get the veggies they need... Such picky eaters..
ReplyDeleteLove to you

I LOVE recipes that can sneak veggies into the little angels. :) I had no idea you could leave carrots in the ground through winter. I wish I hadn't pulled mine last fall. Great info - thanks!
ReplyDeleteI would have never thought of this! The pancakes look so good!
ReplyDeleteWow! Thanks for this! My son won't touch carrots unless they're blended into various fruit juices- homemade V8 Splash! :)
ReplyDeleteI shred all kinds of veggies into pancakes, oatmeal, even eggs to get in a little extra breakfast nutrition. I always add a bit of flax meal to carrot pancakes...super yummy!
ReplyDeleteToo funny, I am just getting around to reading this issue of Cooking Light and flagged it this morning to add to my meal plan for the week. We rarely ever have breakfast for dinner (not sure why) but I can not wait to feed this to my family. I already use a whole wheat sweet potato pancake mix - this will only add to teh nutritional factor & taste
ReplyDeleteThank you for sharing this recipe! What a great way to fit in more veggies and I love carrot cake and pancakes!
