my favorite summer dessert



When it's hot outside I love to have a cool treat. This Eclair dessert always hits the spot. Mmm, good thing it's hot today!

Eclair Dessert
2 small packages instant vanilla pudding
3 cups milk
1 package of chocolate frosting (or make your own)
8 oz. cool whip
1 box of graham crackers

--Stir pudding mix and milk together and let set for 5 minutes. Fold in cool whip. In a 9 x 13 pan layer graham crackers (I usually break some to get them to fit right). Then layer on 1/2 of the pudding mixture. Layer twice more and then spread frosting all over the top. Let set overnight or at least 3 hours.

  2. yum, this dessert is always a hit wherever i take it!

    i melt my frosting for a few seconds in the microwave and pour it on top. And I also make it 1/2 day to a day before serving so that it will be easier to cut.

    Also I have tried this with the cinnamon sugar graham crackers and it becomes so much better!

  9. OMG! My mother-in-law made this recipe when she was here visiting and all I can say is "YYYUUUMMMYYY!!!" It just melts in your mouth. Thanks for the reminder...this will be good to make at this get together my hubby and I are going to this weekend.

  15. This is my "man dessert"! I haven't found very many men that don't just love this! I haven't tried it with the canned frosting though. It would be even quicker to make then!

  17. I'm sorry, but maybe I'm missing out on the obvious here...but is the final top layer graham crackers with the frosting on top of them, or is it frosting on top of pudding? I would imagine it would be easier to get the frosting over the grahams. :)

  19. You are right, E. Frosting over the grahams. I microwave mine a bit so it is softer and easier to spread.

  25. My family has been making this dessert for YEARS!!! and we all LOVE it!! We use french vanilla pudding and always make it at least the night before so the grahams have time to get all soft. Oh now I think I have to go make one :)

    I usually microwave my frosting until it is softer and more spreadable and that helps. Then you just have to be gently as you spread! Hope that helps! :)
