Applesauce Cake
3/4 cup shortening
1 cup sugar
2 eggs
2 cups flour
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
1/2 tsp. cloves
1/2 tsp. nutmeg
2 cups applesauce
1-2 cups raisins (depending on what you like)
--Cream shortening and sugar. Add in eggs and vanilla. Sift dry ingredients and combine with wet ingredients. Add applesauce and raisins. Bake at 350 degrees for 40-45 minutes in a greased 9x 13 pan. Top with the following icing when cool.
3/4- 1 box (lb) powdered sugar
1 egg
1 cube soft butter
1 tsp. vanilla
--Combine all ingredients and add more powdered sugar until desired consistency.

ReplyDeleteGlad you're picking and making your own so you don't have to worry about arsenic! LOL! I'd love this recipe I know. Currently dieting. May save for later. My grandmother dried her apples and made fried apple pies from them. We called them tarts. Man were they delish!

This looks/sounds delicious! Have you ever substituted another kind of fat for the shortening? I don't use shortening but I was thinking of replacing it with some plain yogurt and canola oil.
