oatmeal caramelitas

It's Wednesday (aka hump day). Anyone need a little pick-me-up to get them through the week? Take a look at these goodies.

They have caramel. They have chocolate. They have oatmeal (see I did throw in a tiny bit of healthiness), and they are gooey. Go make some. Treat yourself. These will definitely make you feel like you can make it through to the weekend.

Oatmeal Caramelitas
35 caramels
5 T. evaporated milk
--melt in a saucepan over low heat stirring often until melted and combined.

While melting caramel, mix together:
1 cup quick cook oats
1 cup flour
3/4 cup packed brown sugar
1/2 tsp. baking soda
1/4 tsp. salt
3/4 cup melted butter
--Press half of the mixture into a greased 11 x 7 pan. Bake at 350 degrees for 10 minutes. Remove from oven and sprinkle with 1 cup chocolate chips. Pour caramel mixture over chips. Crumble remaining oatmeal mixture on top. Bake for 15 minutes more. Refrigerate immediately for at least 2 hours. Cut and eat!

  2. These are the best. I had them for the first time last year and LOVE them so much. When I make a batch...I have to give some away because I will eat the whole pan they are that good!

  6. mmmmmmmmmmm I'm making these today! do you suppose you could use the caramel sauce that goes on ice cream?

    You can use the caramel sauce if you wish, but be aware that it is runnier than the actual caramels so I am not sure if it would make them too gooey. The caramels harden back up a bit after being in the fridge whereas the caramel sauce doesn't.

  14. Those look delicious! I would be interested in knowing how to make these dairy free. Does caramel have dairy in it or Has anyone ever found some that don't? And what would be a good substitute for evaporated milk in soy form? Silk soy creamer maybe?? Bc these look divine and I wanna make some! Thanks for sharing your recipe!!!

    my mom makes something similar to this called Fruit Bars with the same oatmeal stuff on top and bottom but then with jam in the middle. also addicting, but this has ChOcOlAtE in it!

  21. I have homemade caramel sauce I would love to use for this recipe. How much caramel do you think 35 caramels makes? 1/2 cup? Any ideas?

    I am not sure exactly how much it makes, but it covers most of the oatmeal crust when it comes out of the oven, so I would just spread some all over that.

  24. Oh. My. Goodness. Oatmeal Carmelitas were a "secret" recipe at a deli I worked at in college! I haven't thought about them in years! Now I'll have to make some. Thanks a lot ;)

  27. If I have a 9x9 pan and a 9x13 pan, which do you think would be better to use? And how should I modify the baking time? Thanks for posting! These look amazing.

  28. Hi Shanda,
    I always used to make these in a 9x13 pan but they were thinner and I found it harder to spread the crust so thin, so I eventually switched to making them in an 11x9. So go ahead with the 9x13 and the cooking time should be about the same.

  32. Yes, I do. Although there have been times I was impatient and put them in the fridge when they were still a little warm :)
